We cultivate a variety of gourmet culinary and functional mushrooms on logs and grow them naturally, outdoors in the foothills of the Appalachian Mountains in Kentucky.

Lion’s Mane Mushroom

Hericium erinaceus

Lion’s Mane has gained a lot of attention in the past few years due to research suggesting a positive impact on our cognitive functions such as memory, mental capacityn and even neuron regeneration!

We grow this species on sugar maple and beech wood and use it for both culinary and medicinal product making.

Shiitake Mushrooms

Lentinufa edodes

We grow a variety of Shiitake mushrooms in several types of wood. Shiitakes are not only delicious but have potent medicinal properties and are full of vitamins, minerals and fiber.

Bear’s Head Tooth

Ericium americanum

Very similar to its relative Lion’s Mane, this mushroom is famous for its “crab-like” texture and flavor. We grow them in Beech logs.

King Blue Oyster

Pleurotus ostreatus

This is a cross between the Blue Oyster mushroom, and the Elm Oyster mushroom and its one of our favorite of all oysters. They grow from many tiny little clusters of pins into beautiful large caps of a grey-blue hue and think white stems. Their texture is excellent and they have a long shelf live of about 10 days when properly stored. These are a fast growing mushroom making it an ideal for beginner growers.

Reishi Mushrooms

Genoderma lucidum

This popypore mushroom is probably the most studied in the world due to its popularity in Traditional Chinese Medicine and its uses in many Asian countries over centuries. It is often referred to as “ the mushroom of immortality” and it was given to emperors in the form of tea as a longevity elixir.

Turkey Tail Mushroom

Trametes versicolor

This mushroom grows wild in the Appalachian forests.
This polypore is considered a white rot mushroom because it decomposes wood rapidly and turns it into bio-available nutrients for other trees and plants to absorb. Also vastly used in Traditional Chinese Medicine for its cancer-fighting and immune-modulator properties.
